Taste the freeze-dried honey cake!


From 4–6 September at Riga Food 2025, in the Innovation Exhibition at the Latvia Hall, visitors can discover the healthy and original products of Ozolu bites. The range includes honey blends with berries and fruits, various freeze-dried products, and the unique honey cake.

Ozolu bites breaks the stereotype that honey cannot be freeze-dried. The honey is baked into delicious honey cakes, carefully prepared for freeze-drying, then packaged and delivered to customers.

Honey and honey blends with berries and fruits
The company began with creating different honey products. Honey blends with locally grown berries and fruits have earned particular recognition. For example, honey with cranberries and ginger serves as an excellent immunity booster during the chilly autumn and winter months. These blends are also appreciated by those who find classic honey too sweet — the tart berries and fruits create a perfect balance of flavour. Currently, there are 12 honey varieties: with quince, rhubarb, sea buckthorn, raspberry, strawberry, blackcurrant, rowan berry, chokeberry, cranberry and ginger, mint and citrus, strawberry and rhubarb, and wild blueberry.

Freeze-dried fruits and berries
In addition to honey products, Ozolu bites offers a wide range of freeze-dried fruits and berries. Freeze-drying is a special preservation method in which the product is frozen and then dehydrated through sublimation. Since it is not exposed to high temperatures, most of the valuable nutrients and vitamins are retained.
One of the most popular products is a fruit-and-berry mix containing freeze-dried pineapple, strawberry, pear, kiwi, blood orange, plum, apple, watermelon, raspberry, persimmon, peach, mango, and more. This is a 100% natural snack with no added sugar.
A children’s favourite is freeze-dried Latvian strawberries — sweet, fragrant, melting in the mouth, and tasting just like summer. This method makes it possible to enjoy berries all year round, regardless of the season.

Freeze-dried honey cake
The bestseller is the freeze-dried honey cake, first introduced in May last year. Within a year, it has become the brand’s signature and most in-demand product. Made with butter, honey, sour cream, and cranberries from Latvian bogs, the cake has a sweet-and-tangy, nostalgic taste and a pleasant crunch, delighting even the most demanding gourmets.
This unusual treat travels with people on hikes, trips, and is gifted to friends and family abroad. It has already been to nearly all European countries, as well as Thailand, the Rwenzori Mountains in Uganda, the Seychelles, Canada, the USA, and beyond. The long shelf life makes it highly promising for export. New flavours — with wild blueberries and blackcurrants — are currently in development and will be available for tasting at the exhibition. Each piece is 100% handmade.

A family business
Ozolu bites is a family apiary in the Vidzeme countryside, creating delicacies from honey and freeze-dried products. Head beekeeper Intars has worked with bees since the age of 12, when neighbours rewarded his help in their apiary with his first bee colonies. A love for rural life and simple things unites the family, whose motto is: “Bees can live without us, but we cannot live without bees. Honey is our gold.”
